Lemon Balm is a member of the mint family and is native to southern Europe, central Asia and the Mediterranean basin. It has a lemony scent and flavor, and the small white flowers attract honey bees. The essential oil is said to have a calming effect, and it is used in making perfumes. Culinary uses: teas, chicken, fish, pesto, fruit juices and seafood. Lemon balm can reseed somewhat aggressively – cut off spent flower stalks before they drop seed.
